Banana Waffles
Who doesn’t love a good waffle breakfast on a Saturday morning? Topped with this cinnamon sugary banana glaze, it’s the perfect combination of sweet and savory!

When I combined bananas with the ingredients for modern waffles, put a little twist on it, and mashed it up, these melt in your mouth waffles were a hit for all my picky eaters. Yummy, healthy & homemade, all in one.
My step-sons come to our house on the weekends and the youngest out of the two is a pretty picky eater, as are Remi & Ariah. For the most part they would eat the same meals for breakfast, lunch, & dinner. It drove me absolutely nuts!! I wanted them to explore other foods and get them to eat healthier.
Saturday morning we got up and I opened Pinterest, like I do most mornings for meal inspirations I can use throughout the day, to see what I could make the kids for breakfast. I love my waffle maker so of course I was looking up waffle recipes. I wanted something new, but something they’ll like and is still healthy at the same time.
I originally came across an apple crumble muffin recipe and wanted to try that in the waffle maker but shortly realized that when I ran to the grocery store, I got everything except the apples. (Mom brain, it happens everytime!!) So I had to put that recipe on hold until the next grocery trip and figure something else out. I remembered while I was out, I picked up some bananas at the front and they even turned out to be the organic bunch, which was a plus.
Ive made quite a few different types of waffles so the base mixture is always the same, just altered for each recipe, depending on what it is. In this case, with it being banana waffles, i needed the mixture to blend perfectly with the smushed bananas and still be a nice and fluffy combination. With the added ingredients, it cooked together a waffle with more of a banana bread taste. It brought back childhood memories for me and created a taste my kids were more than delighted in.

After mashing them up, I wanted to fry sliced bananas over the stove and make a topping that was just right for these one of a kind waffles. It didn’t end up happening the way I wanted it to though because between three hungry kids, an exhausted and barely functioning momma, and our puppies that chew everything, I took a simpler way out that turned out to actually be surprisingly just as good.

After all the kids finished eating their first plate and I was fixing their second, Tyler came up to me and said, “those were even better than the regular ones.” Hearing those words, I could’ve cried because from scratch I made a healthy breakfast that all three of my picky eaters ate and loved! That coming from the pickiest one of them all though, and the one who will very rarely try new things, it meant the world to me. I’d call that a win all the way around for this momma!!!
Ingredients
- 1 1/2-2 Cups Flour (Begin with 1/2 Cup and slowly add in until it’s at your desired thickness).
- Pinch of Salt
- Sprinkle of Nutmeg
- 2 tbs sugar
- 2 tsp Baking Powder
- 2 Egg Yolks
- 1 tsp Vanilla
- 1/2 Cup Milk
- 1 Banana, mashed
- 4 tbs of Butter, melted
Toppings (Optional)
- 1 Banana, sliced
- Cinnamon & sugar (sprinkle to desired flavor)
- Syrup
- Butter
Instructions
- Preheat waffle maker.
- In large bowl, stir together the flour, nutmeg, salt, sugar, and baking powder.
- In a separate bowl, beat egg yolks with milk and vanilla.
- Stir the wet ingredients into the dry mixture until its evenly blended.
- Fold in your bananas and butter, gently. (Lumps are okay)
- Pour the batter into the middle of the waffle maker for smaller, kid friendly, sizes.
- Finish with either the cinnamon sugary glaze, or simply just syrup and butter, to top off this delicious breakfast.
